Despite the frigid weather, students in the January class "Managing Risk in Outdoor Recreation" used portable camping stoves to cook dishes such as pasta with vegetables, oatmeal, chili, and a beef stew-type concoction. The scenario required students to choose foods which would travel well in a backpack, provide adequate nutrition, and learn to clean cookware and dishes while leaving no trace in the wilderness.

During the month-long course, the class will also learn and practice skills related to emergencies in outdoor settings. BVU Director of Recreation Services Ellen Schiltz is teaching the course.
